As we prepare to gather in celebration of Thanksgiving, our thoughts turn to the special times we’ll share with family, friends, and coworkers, gathered around dining room tables and in breakrooms, and the array of food that will bless these gatherings. And just to please your palate, check out this tasty recipe for one of Turkey-day’s favorite side dishes.
Sweet Potato Casserole
Ingredients:
- 3 cups mashed sweet potatoes
- 1 cup maple syrup (or brown sugar, the syrup is healthier)
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1/2 cup cream (or milk)
- 1/2 cup melted butter or margarine
Topping:
- 1/2 cup maple syrup or brown sugar
- 1/3 cup flour (may substitute a gluten-free alternative)
- 1/3 cup melted butter
- 2 cup chopped pecans
Preparation:
Combine the first six ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining
ingredients and sprinkle over the top. Bake at 350° for 30 to 40 minutes until hot and browned.
Serves 6 to 8. This recipe can easily be halved, doubled, or tripled to accommodate any sized Thanksgiving Day dinner crowd; adjust ingredients and dish size accordingly.
